A Few PRISM Friendly Recipes - Snacks & Desserts That Can Pass For Breakfast!

I am thinking of upcoming baby showers, birthdays (a 1st, an 18th, and a 40th in our family alone!), open houses, and other get-togethers.  Not to mention the holidays are around the corner!  If I am going to make it and keep my "I quit sugar" resolution, I think I am going to have to have some alternatives.  And if you know me, I do not care for aspartame or other similar sugar substitutes. I will use Stevia, but I am trying to steer clear of even the approved sweeteners PRISM allows, such as raw honey and sucanat.  I have used them but very sparingly as I don't think it helps my sugar addiction.  (Stevia likely doesn't help either, but one thing at a time... okay?

DISCLAIMER:  I do not claim to represent PRISM in any way other than being a regular participant in the first phase and preparing to move into the second phase.  I don't know that any of these would truly be PRISM-approved for these phases.  I don't know that any of these would be considered against the guidelines.  I am not giving you permission to eat any of these foods.  Thanks for reading. Carry on.

These aren't my recipes.  I am posting links to other blogs and websites.  (I hope I am giving proper credit on these; I am not so knowledgeable regarding blog etiquette and such.)  A few I have made but most I are on my "Eat Soon" list.

I want to give a little side note on stevia.  I am nowhere near an expert on food or health.  If you decide to go with stevia, you may want to start out with less and slowly add more.  There is a point where more stevia can turn your dish bitter.  Or just not sweet and tasty.  And it seems to me, you never know exactly where that thin, invisible line is.  Since I have started adding less, and gradually adding a little more, I have had much better success.  Here is a conversion chart I found somewhere along the way that may be helpful.

I'll try to list all the recipes from SugarFreeMom.com together. I am intrigued by her site, and her premise.  Many of her recipes utilize stevia for sweetening.  Also, she went through PRISM at one point in her journey as well.  Several of the recipes I have previewed are gluten and dairy free, and her recipes usually include calories per serving (& other nutrition facts). Yay!

Personalized Pumpkin Baked Oatmeal Cups

Crock Pot Pumpkin Pie Steel Cut Oats

Cocoa Baked Quinoa Bars

Baked Fruity Quinoa

Sugar Free Cranberry Banana Smoothie - sounds so good for Thanksgiving morning...

Pumpkin Vanilla Sugar Free Smoothie - did you notice the pumpkin theme yet?  I have been hankering for some pumpkin lately.

Sugar Free Chocolate Mousse Topping or fruit dip, as I call it.  The recipe recommends using a stand mixer for best results... (no artificial sweeteners)

Baked Apple Chips - My mom makes these in her oven, and they are so yummy.  Of course, Mom didn't get the idea or the recipe from this website... Don't be offended, Mom. <3 you!  (And maybe a little freshly grated nutmeg.)

There are soooo many options on this site.  We have had the Dairy Free Chocolate Pudding (Sugar Free).  We tweaked it a bit to our liking, and Delainey and I ate that at Scott's birthday party instead of the Banana Bread Muffins Kynzie made for everyone.  (Her first time baking something, and I couldn't even try it.  Sad story.  But I know it is worth it. Getting this proverbial monkey off my back is going to be good for the whole family.)

Ideas and Recipes from other sites:

Banana "ice cream" with various flavors (not all the variations listed are PRISM friendly, such as the Nutella... sorry) You could really go crazy with yummy things to add in! - from thekitchn.com
I can't remember whether this site makes the suggestion to return the processed banana mixture back into the freezer for a harder freeze, but it makes it more "scoop-able".

Pumpkin Pie Shake

Chocolate Nut Balls (for Breakfast) - This gal seems quirky, I think in a good way... She's from Australia, and I don't know what all of her ingredient suggestions are, such as LSA(?).  Like I said, I am nowhere near an expert.

Okay, I can't stand it anymore.  I have to go make something!  Today is actually Baby Jack's first birthday. I think Banana "Ice Cream" is in order, and I will feel great about giving it to him!  I'm off to freeze some bananas.
